Wild Turkey & Rice Soup

From the kitchen of Dale Deibler

 

 

Ingredients:

2 lbs Turkey Breast, Skinned, Cut into Cubes

16 oz Chicken Broth

8 oz Mushrooms, Chopped

6 Stalks Celery, Chopped

6 ea Carrots, Peeled & Chopped

6 cloves Garlic, Minced

8 oz pkg Wild Rice

To Taste Salt & Pepper

2 tbs Butter

1 lg Sweet Onion, Chopped

 

 

Procedure:

Place chicken broth in stockpot, add vegetables. Bring to boil and simmer one hour. Add turkey, butter, salt and pepper. Bring to a boil, then reduce heat and simmer 30 minutes. Add wild rice and simmer 30 minutes. Turn off heat and let set for 10 minutes.

 

Serving Suggestion:

Serves 6 hungry hunters!

After rice is cooked, if soup is too thick, add water and heat to desired consistency.
