Rabbit & Squirrel, Tender From the kitchen of Dale DeiblerIngredients: 1 lb Rabbit or 2 Squirrels ½ cup Olive Oil 2 cups Flour 1 pkg Dried Onion Soup 16 oz Chicken Broth Salt & Pepper
Procedure: Wash rabbit or squirrel and cut into sections (i.e.: legs, backbone, etc). Salt & pepper pieces to taste and dredge in flour. Shake off excess flour and place in skillet where you have heated olive oil. Brown pieces on both sides for several minutes. Remove from skillet and discard excess oil. Return meat pieces to skillet and cover with chicken broth. Bring to a boil and reduce heat to a steady simmer. Pour dry onion mix on top and place cover over skillet. Simmer for 45 minutes or until meat is tender. Remove meat from skillet and place aside.
Serving suggestions: Use the remaining ingredients in skillet to place over mashed potatoes or wild rice. NOTES: Preparation time : 5 minutes Cooking time: @One hour
