The Best Fish Batter/Breader MixFrom the kitchen of John Deibler
Batter may be used on fish, shrimp, onion rings, scallops, chicken or vegetables. Start with “Dixie Lily Seafood Breader Mix.” Pour the contents of the bag (32 oz) into a large bowl and add the following ingredients: ½ teaspoon celery salt, ½ teaspoon garlic powder, and ¼ teaspoon of “Mrs. Dash Gallant Garlic Classic Italiano Seasoning,” and ¼ teaspoon of black pepper. Mix thoroughly. Cut fish fillets into 5 inch long pieces not more than ½ inch thick and put on a large cookie sheet covered with paper towels to dry fillets. Mix ¾ cup of water into each cup of batter mix and stir until smooth (for thinner batter, add more water). Pour an equal amount of dry batter mix onto another cookie sheet. Dip fish into wet batter mix, coating thoroughly. Remove fish fillets and lightly roll in dry batter. Place on another plate. Preheat Crisco oil in deep fryer to 350 degrees. Add onion slices to oil and allow to cook along with fish (this adds flavor). Add fish and fry until golden brown. Drain fried fillets on plate with paper towels. Salt to taste and enjoy!
Note: Store unused portion of dry mix in ziplock bag in refrigerator.
